Two Recipes

Obviously, I am already doing craptastic at my 1st Resolution of keeping this blog alive. But all I can do is sit here with my cup of half caff and right this wrong.

Now on to the subject matter of this post...

I tried out two new recipes lately that I'd like to share. The first being Ina Garten's Eggplant Gratin.

All I can say is WOW. If you need some serious comfort food, do this. The only thing I did different was cook the entire recipe in a small casserole dish, instead of two gratin dishes. If I use this method again, I will lower the baking temp a tad and bake it a little longer. By the time the center was brown and bubbly, the edges where a little blackened. But still delicious!

The second recipe I tried was Deb's Black Bean Soup. This easy, healthy, comforting, and cheap! Can't get much better than that. I made the toasted cumin "crema" with 1/2 light sour cream and 1/2 greek yogurt, which was all I had in my fridge. It was very tasty.

Next time I post a recipe I've tried, I will try to post some play-by-play pictures as I cook. But is won't be this weekend. We are painting our living room, and I promised my husband we could get pizza. That man will work for food.

Resolutions

1. Start this blog and stick with it.
I started a wedding blog and kept up with it until a few months before the wedding. My hope is that this blog can be a little more well-rounded. I want it to be about my family, things I cook, decorating our little house, and the life of Biscuit and the other munchkins to follow.
2. Learn how to use my sewing machine.
3. Do another triathlon after the baby gets here.
4. Make more time for Coach A to sleep in on the weekends.
This is his only indulgence, my friends. He stays uber-fit and handsome, eats healthy, doesn't drink or smoke, is super-handy around the house, and all he wants to do is sleep until 8:30 or 9 on occasion. I, his evil wife who can live on like 2 blinks of sleep a night, deny him this way more often than I'd like to admit.
5. Learn how to use our awesome new camera to capture the precious moments of our family.
6. Take a trip to somewhere I've never been.
We've got miles that expire by the end of the year. I vote San Francisco. Hopefully we can get The Biscuit sleeping through the night by then, and I can bear to leave him for a few days.
7. Quit cursing.
The f-word is part of my vocab on a daily basis. Classy and motherly, I know.
8. Spend more time at my parents' lakehouse and the in-laws' country paradise.
9. Make my wedding album (and upload my wedding photos and send the link to bridesmaids and family).
10. Bring the little Biscuit into this world and do my darndest to keep him healthy, safe, and loved.
See there, darndest... I am already doing good on number 7.
